When chicken lost its vegetable status, I started doing either chicken wings or chicken breasts. Being so fond of chilli I started doing a LOT of "hot chicken wings". Some butchers call them "buffalo wings", others "spicy wings" and there are many other names, but the gist of it is a spicy (often very hot) chicken wing. If you love your chilli as much as I do, then this is one recipe you need to try out.
Ingredients:
24 Chicken Wings
1 Cup Pineapple Juice
2 Tablespoons Balsamic Vinegar
2 Tablespoons Brown Sugar
4 Cloves Garlic (minced)
1 Habanero (diced)
1/2 Teaspoon Ground Allspice
Salt & Pepper - to taste
Method:
1. Combine all the ingredients, except the chicken wings, in a small saucepan and boil for 2 minutes.
2. Remove from heat and pour into a large bowl and allow to cool
3. Add wings to the bowl and place in the fridge for at least 2 hours
4. Braai on a medium heat
